Nutritionist and organic gardener Connie Whitehead of Strawberry Plains, Tennessee, offers advice on growing an organic garden. At her Planted Earth Farm there's always something good to eat. This year it's 250 tomato plants of 15 varieties; next year she'll plant another crop to keep the soil healthy. If you'd like to begin your own organic garden, Connie advises starting small, with a 20' by 20' plot and no more than four kinds of vegetables, two varieties of each. Her own garden is 22 acres total. Some years Connie's main crop is flowers, including zinnias, sunflowers and gladiolus sold at the nearby farmers' market. Corn and potatoes are the main crop in the lower section (figure A) of Planted Earth Farm. Connie usually plants two varieties of corn at different times. One of this year's favorites is a white early corn variety called 'Pristine', which she enjoys eating raw from the stalk.
