    Fluffy Egg Casserole

    Ingredients:

    1 large loaf challah bread, sliced medium-thin
    1 doz. eggs
    1-1/2 cups evaporated or whole milk
    8 Tbs. butter (1 stick), slightly softened
    1 lb. shredded cheese (equal parts Cheddar, Jack and American)
    1 red pepper, chopped
    1/2 lb. cremini mushrooms, chopped
    6 scallions, chopped
    salt
    pepper

    Preparation:

    Note: This is such an easy recipe, it holds up well on a buffet, and is even great cold or at room temperature. It is also great because you can make it the day before and pop it in the oven in the morning.

    Slice one large loaf of challah bread into medium thin slices and then butter each slice.

    Use the extra butter to grease a 3-quart casserole baking dish.

    Combine 1/2 pound of chopped cremini mushrooms, 1 chopped red pepper, and 6 chopped scallions in a bowl and then set that aside.

    Combine equal parts of shredded Cheddar, Jack and American cheese in bowl to total one pound and set that aside.

    Take the bread slices and layer them covering the bottom of the dish. Sprinkle one half of the veggie combo over the bread. Then sprinkle one half of the mixed cheeses over the veggies. Season with salt and pepper to taste.

    Repeat the process with another layer of bread, topped with veggies and cheese and season with salt and pepper.

    Crack a dozen eggs into a bowl and beat them with 1-1/2 cups of milk. Pour the egg mixture over the casserole layers. Cover the dish with foil and refrigerate overnight.

    The next morning, bake the dish, with the foil on, in a 350-degree oven for 1-1/4 hours until the eggs are nice and fluffy. Let the casserole sit for about 10 minutes before serving. If you prefer, you can even precut slices for easy serving.

    Serves: 6

    Brunch Tips:

    • To make the day of the party easier, set your table the night before.

    • It is a good idea to warm your plates before serving on them. Just stick them in the oven on the lowest setting for a few minutes.

    • For an easy brunch centerpiece, turn terra cotta pots of varying sizes upside down and place your platters on top. This will add height and texture to your table and will protect the table for hot dishes.

    • For a nice final touch, place one daisy at each place setting to say "Welcome!"
